Tarts and tartlets

I have made quite a few tarts in the past—some chocolatey (mmm I absolutely love chocolate), some fruity.  Here are some of my tarts:

Nutella tart
Crust – sweet tart dough
Chocolate used – Valrhona Noir Gastronomie

 

Tarte grenobloise
Crust – chocolate-almond pate sablee
Chocolate used – Bensdorp dutch process cocoa powder, Valrhona Guanaja

Grand chocolate tart
Crust – sweet tart dough
Chocolate used – Valrhona Guanaja, Bensdorp dutch process cocoa powder
You can’t really tell from this picture, but this tart is actually made up of a cake layer and a ganache layer. I also had to make lacy-coffee-cocoa nougatine cookies (they’re more like candy than they are cookies) and put them on top of the tart.

French apple tart
Crust – sweet paste (pate sucree)
I love how you can see the layer of jam at the bottom.

Lemon tart
Crust – sweet tart dough
Filling – lemon cream

Strawberry mousse tart
Crust – sweet tart dough
Filling – strawberrry mousse

Orange tartlets
Crust – sweet tart dough

Tartlets with cream d’amande and fresh fruits
Crust – sweet tart dough
Filling – cream d’amande
